The typical Catalan botifarra sausage is a culinary masterpiece, crafted exclusively from finely minced, lean pork, seasoned with salt and black pepper, and occasionally, a hint of bacon. Depending on the variant, you might find additions such as mushrooms, pork liver, pig’s blood, honey, parsley, or garlic. All these ingredients are expertly hand-blended before being encased in pork intestine. The resulting sausages typically measure around 15 centimeters in length.
